At the heart of our biltong business in the beautiful Dordogne region is a man named Doddy — a passionate craftsman with a story as rich and flavourful as the product he creates.
Doddy’s journey begins over four decades ago in the vibrant landscapes of South Africa, where he spent 10 formative years of his childhood. It was there, amidst the culture of outdoor gatherings, smoky braais, and community storytelling, that his love for biltong first took root. For South Africans, biltong is more than just a snack — it’s a tradition, a symbol of heritage and shared moments. For Doddy, it became a taste of home and a connection to the warmth of simpler times.
In adulthood, Doddy took to the road, spending two years travelling the world, exploring different cultures, cuisines, and ways of life. From the street markets of Southeast Asia to the cafés of South America, he developed a deep appreciation for authentic, handcrafted food. But no matter where he wandered, he never found anything quite like the biltong of his youth — bold, naturally cured, and full of character.
Eventually, he settled in France, making the Dordogne his home for the past 20 years. Surrounded by rich culinary traditions and an abundance of local produce, Doddy saw an opportunity to blend his heritage with his environment. He began experimenting with traditional South African recipes using locally sourced French ingredients — marrying the old world with the new in every bite.
Today, Doddy brings all of this experience — his South African roots, global palate, and French sensibility — to his biltong business. Every batch is handcrafted with care, using time-honoured methods and the highest quality local cuts of meat. His approach is artisanal, honest, and rooted in the belief that great food should have a story behind it.
